A puff pastry bottom, with rum-soaked chiffon, raspberry jam, diplomat cream laced with rum, whipped cream, and decorated with cream puffs covered in hard caramel which are also filled with rum-cream, and raspberries. Only made in 8” or larger. (Made without rum upon request.)

A tower of rum custard-filled cream puffs dipped in a hard crack caramel. $10.50 per serving (approx. 3 cream puffs), minimum 10 servings. Made without rum on request.
